Just one character for me. I can offer our local tactician/swordswoman/mage, Morgan. As far as race abilities, I don't know if there's a feat for representing transforming like a Manakete properly, but if there isn't, it's not too big of a deal. I should be available majority of the time during the times you're available, unless something comes up.

For Morgan, I'm looking for more of a magic knight approach (Duskblade was brought up, and I like that) with an emphasis on team synergy and being able to support her allies. Her spells would be a healthy mix of elemental stuff and necromancy.

Times Available: Pretty much all times and all days. I doubt I'll be busy with something else that late. At least not anything I'd need to take care of.

Characters of Interest: Moon Focus on range bow fighting with a side of healing however possible, Zelda (BOTW) focus on magic crafting and general magic, Yellow companions and magic based with healing center plausibly, Seriri bard things primarily, Tiki Dragon with I was thinking a more divine tank thing like Paladin or something, Witch primarily magic but crafting side-focus would be good as well or Kairi magic focused, could be light or general magic caster.

Times Available: Pretty every time of every day except Sundays, I have a different DnD thing on that day starting at 6pm and ending at 9pm. So if the game is on a Sunday it has to be after 9pm. I'm on Eastern Standard Time. Once a month on a Saturday I have a session I run too. That's today so every other Saturday will be free until the next one is planned for the next month which is March 6th. Fridays are the best day I have out of those days.

Number of Interest: 3

Characters of Interest: Aera and Dinah, Haseo, and Raguna. Preferred that Aera and Dinah be picked out of all of them.

Possible Classes for Characters:

Aera and Dinah would likely be a Cleric. To be more specific Aera would be the Cleric and Dinah would be her summon. I can see the healing spells being used through Dinah or that Dinah would be part of her kit. Maybe a summon or just part of her character. Water spells like Create and Destroy water are in fact a cleric spell she could use. She could get more water spells later too as a Water Domain Cleric. She could also heal the team a lot with Life Domain Cleric since she gets 2 domains.

Haseo could easily be a Fighter with some Hunter or Rogue too. He uses a lot of weapons and has many attacks at his disposal. 

Raguna is a potential Bard since he isn't much of a fighter and his Rune magic could be basically his way of using bard spells and inspiration.

Alright, so, I can work with these days, though there is a problem that 8 PM EST is the time I'd normally have dinner. 8:45~9 PM EST onwards I'd be more free to go, but I'll warn you if something happens.

As for characters, I'm gonna offer up 3 of them: Amitie (Spellcaster, though a more elemental magic focus would be preferable), Lidelle (Dragon, with wind/electric breath and abilities if possible) and Rhyme (Monk, with maybe a heal that she can redirect to a party member).

Fun fact when creating your characters: You get a feat at level 1, and you can (and should) select up to two flaws in exchange for 2 extra feats. It is always worth it to do this.

I recommend Human for your race and Spellcaster for your class. That should give you most of your spellcasting. We can reflavor an existing weapon to a keyblade and give you bite of the king as a once a day spell-like ability to simulate your mom's gloves.

You want to play a dragon? Here. I've taken the liberty of tracking down the most convenient way to play a dragon and organizing everything you need. I chose a Blue Dragon because they are the ones with lightning breath. We can just ignore their "normally evil-aligned" status. Dragon is both your race and a class. We can select a couple of wind/lightning spell-like abilities to give her too. I recommend Snatch, Improved Snatch, Snatch and Swallow for your level 1 feats, and Hover, Multiattack, Improved Natural Attack, and your choice of Metabreath Feats for future levels. These are all feats that most players can't really use, but which benefit a dragon considerably.

Purple

I recommend Human for your race and either Druid or Ranger for your class. Both Druid and Ranger get an animal companion, which are analogous to Pokemon. However Druid Animal Companions are stronger. Druids have full spellcasting. And Druids can wild shape into monsters. There are also feats like Wild Cohort that let you double up on animal companions, and the Beastmaster Prestige Class will let you have even more if you really want to lean in on having a full 'pokemon' team. There are also feats that expand the types of creatures you can have as companions. Ranger in comparison to Druid focuses more on their own martial talents, but is overall a weaker, more niche class that won't actually aid the pokemon trainer fantasy unless you want Purple to be martially involved.

I want to play a psionic class. Because like, psychic type y'know? But I'm not sure if there's even a race similar to a gardevoir. And I'd like to try for some elemental attacks and some life draining attacks if I can, though I'm not sure if there's a psionic class that does that.

Witch
I want Witch to play... a psychic witch! I'm not sure whether a psionic or a regular magic class would be better for that though. Maybe Wizard? And a kitsune race might be nice. I don't know if one exists though.

Sophia and Olivia
I saw mention of a two people one race earlier? I think I'd like to try Dvati out. I want them both to be martial artists with martial artist magic. I'm not sure if monk is the best class for that? Oh and I'd like a rabbit race for Olivia and either a Jackal or a Monkey race for Sophia. Any templates that grant some type of immortality would be nice. Oh! And if they can be fey all the better.

Is there a way to combine a rogue with magic? Maybe a druid so that she can be a pokemon trainer too? Because that sounds like what I'd like to do with Julia. Oh and racewise I feel like fey/catgirl is her vibe. Maybe something that helps her sneak.

Alright! I'm onboarding you two. Sessions are at 8 PM EST on Saturdays. You are starting at level 11 with 108,000 gp to spend on your starting gear. The party just finished liberating a slave camp, so as a matter of convenience you will probably have been among those recently freed, allowing you to smoothly join in on their way back to town to collect their reward.

I am going to recommend you Hengeyokai as a race for the fox affinity. It's probably the simplest solution. If you want an insane race to play that'll also solve your problem, Unbodied are an option that can take any form they want. Another insane option would be a Half-Giant with the Primordial Giant and Quasilycanthrope template attached. Quasilycanthrope can be applied to any of your PHB classes to give them fox tails/ears as well. Though at your level, you can afford to just get a magic item that gives you those things. If you use the unseelie fey race to customize a fey race I think fox tails/ears could be a reasonable... mutation. A pixie or a petal could be a suitably witchy race. Heck. If you wanted to be teeny tiny for fun, there's even a Gorse Fairy.

I'm going to recommend Erudite as a class, specifically because of it's Spell to Power class feature that will allow you to learn any spell in the game, giving you complete freedom to learn as much as you want. The phrenic template might be of interest to you if you chose something with LA+2 or less.

Sophia and Olivia
You did choose Dvati, so I can't quite give you a recommendation on a second race. xD However, the quasilycanthrope template could solve your problem here. I'd allow you to have them be two different types of quasilycanthropes, since it's largely a flavor thing. Alternatively, a magic item of continuous alter form could turn you into a Hare Hengeyokai or Dog Hengeyokai real easy-like.

A lich or a vampire will get you your immortality. I'd let you play either. Though be warned, being a lich requires you to have a caster level of 11, which you'll have to carefully consider in your build. The Practiced Spellcaster feat can help with this.

Alternatively, you could use any of the fey templates I gave above for Witch for that fey angle.

For your class, I'm going to recommend something a little more complex. Assuming you don't gun for a lich, I'm going to recommend a Tashlatora build. Tashlatora is a feat that lets you combine the core Monk abilities with a psionics class of your choice. It's set up best to work with Psychic Warrior, but any class will do.

Alternatively, you could go Battle Sorcerer and take Aescetic Mage to get some key monk abilities without ever technically having to take a level in monk. Though taking levels in monk might be worth it to qualify for Enlightened Fist easier.

I'm going to recommend a human monk. I recommend giving the Fighting Styles and Draconic Fist Alternate Features a lookover. There's a bunch of other options there. Those are just neat and (relatively) basic ones. The half-celestial template might be a thematically appropriate way to give her a power boost.

If you're interested in wrestling enemies or just knocking enemies on their butt for easier beating up, which is a pretty effective way of fighting as long as you're not fighting giant monsters who will laugh at you for trying to grapple/trip them, I recommend looking into the Jotunbrud/Scorpion's Grasp/Knock-Down feats. They are quite fun.

I'm recommending a human Ranger! Mystic Ranger is worth considering if you want much better spell progression. It trades out your animal companion, but you can get one back with the Wild Cohort feat. Alternatively, you could have 2 animal companions as a normal ranger with that feat.

If you decide to do archery, precise shot and a magic bow/crossbow with the splitting quality on it are must-haves. A melee build is a bit more complicated.

I'm going to recommend you... a pixie! They're short, grant a ton of stat bonuses you're really going to enjoy (Dexterity and Intelligence), and their ability to become invisible at-will will synergize very well with a rogue. The unseelie fey template could be used to justify a let's say 'fluffier' pixie with a poof tail. Alternatively, a magic item of continuous alter self could be as cheap as 1,890 gp and accomplish the same goal. There are technically some mouse/rat races, but I think this would be the funnest choice.

Classwise, I recommend taking a look at Friend's Evasion as a potential fun ACF. And I recommend picking up a pair of Gloves of the Shadowblade for 9,450 gp if you have a high dexterity.

Featwise, I recommend looking into the Education and Knowledge Devotion feats. Education will get you all knowledge skills as class skills, and knowledge devotion will let you translate knowledge checks into a combat advantage. The collector of stories skill trick will give you a +5 on identifying enemies. Skill tricks can be learned at the cost of 2 skill points, and that one is well worth it if you choose to take knowledge devotion.
